ahh Sundays

The weekend is over. Which means it is time for me to relocate.

My summer job is to be a nanny/au pair/babysitter for a nice family about 20 minutes away from my house. During the week I live with them full time and on the weekends I go home and stay with my mommy. That’s why I haven’t yet fully committed to becoming a vegan right now. You can buy your own fruits & veggies and you can get your parents to buy them for you (sometimes), but it’s kind of hard to make the omnivore family that you work for buy you vegetarian ingredients. So during the week, my concoctions are limited. Smoothies and simple salads. Fun times.

Anyway, today was pretty relaxing. I already shared my lovely mango hedgehogs that I had with lunch. But let’s start from the beginning.

oatmeal!

For breakfast I had oatmeal with some dried cranberries, applesauce and (shocker) flaxseed. I’ve really been loving my flaxseed. And here’s why. Yay flaxseed!

Lunch consisted of a salad with oranges, sunflower seeds and (OMG) flaxseed!!! And on the side I had my mango cubes.  Sidenote: You don’t have to be concerned. I am not eating too many flaxseeds. I don’t use the full serving size in one meal; I spread it out throughout the day =)

For dinner I had another salad. This time with some peppers and cucumbers. I also mixed some garlic with oil-free balsamic vinaigrette and (big surprisee) ground flaxseed. It was extremely garlicy.

That’s my day in a nutshell. Now I’m sitting in bed and watching Forrest Gump on TNT. And trying to find other blogs written by vegan/vegetarian teenagers and college students. So if you’re out there, give me a shout! Or a comment. Whatever works.

another late night/early morning post

Well. Today was eventful. I was out for most of the day, so my meals were pretty hectic. But I managed.

For breakfast, I had my typical fruit smoothie. However, I did not have any spinach leaves to add in like I usually do. They don’t affect the taste much and I get a nice healthy serving of veggies before noon =). They do usually make the smoothie look pretty gross, though. But still delicious! I usually just throw in a few ice cubes and whatever fruit I have lying around. Today, I happened to have a smaller variety to choose from than normal. But despite my lack of spinach and exciting fruit, I was able to add flaxseed for the first time! I think I got a little over-excited though and put in just a littleee too much. But it did not harm my smoothie in any way, except for making it a little seedy.

4-5 ice cubes

1 banana

1 plum

a handful of green grapes

1 personal cup of Mott’s Healthy Harvest Summer Strawberry Applesauce

flaxseeds!

A little tart, but I enjoyed it.

For lunch I grabbed a Boca Veggie Burger on a whole wheat pita with some onions and peppers and balsamic vinegarette. Not creative.

Dinner was at a friend’s house for her birthday. They made vegetable stir fry for the 2.5 vegetarians that were there. And some fruit salad for dessert.

Later, after I got home, my mom and I wanted to make something. We decided on Dr. Fuhrman’s Apple Bake from his book Eat to Live. It did not work out as well as we planned, which is why I don’t have any pictures. The basic idea is to heat chopped apples, raisins and cinnamon on a stove and then stuff pitas with the fruit and put them in a toaster oven for 3 minutes. Sounds simple? Not so much.

My mom and I have noticed that the Toufayan Whole Wheat Pitas that we have been using are very fragile. Once stuffed with the apple-raisin-cinnamon concoction, we put them in the oven for a new minutes, since we don’t have a toaster oven. When they came out, I tried to put the pitas on plates but they split down the middle.  So we cut up the pita and just ate it with the fruit. Very simple and tasty and it smelled delicious. However, I am now on a mission to find sturdier pita pockets.

good morning, Sunshine!

First post. It’s 2AM and I’m still awake. Anna Nalick, anyone?

So I’m obviously new at this whole thing. But the number of Vegan blogs out there truly astounded me and I decided to join all the fun. I would like to post some of my own recipes, but in the past I’ve been more of a follower than a doer. Of recipes, that is. But since I am all for change these days, I’ll see what I can do.

As for the remaining time until I return to school and commit to being a vegan, I’ll do my best avoiding animal products. As it is, I’ve only been using the occasional egg whites in my cooking.

I’ll keep you posted (not that anyone is even listening to my ramblings at this point).
